Parmesan Cheese Coated Pork Chops – tender inside, crunchy outside!

This recipe is a quick and extremely delicious way to prepare pork chops. One bite through the crispy coating into the tender and juicy pork chop and you will be hooked. Parmesan Cheese Coated Pork Chops are a taste sensation your family and guests will love.

This recipe incorporates an old clever restaurant technique. First fry the Parmesan Cheese Coated Pork Chops slightly in a hot skillet, before finishing the cooking process in a hot oven. This way you will not overcook the pork and end up with dry, tasteless chops.  

It is best to bake the pork chops on a baking rack fitted in the baking tray or broiler pan. This technique allows air to circulate around the pork chops and yield a crispier exterior.

Serve with mashed potatoes and peas or green beans for a delicious, balanced meal.

    Ingredients

    • 2 eggs

    • 2 tablespoons mustard

    • 1 tablespoon water

    • 1 cup bread crumbs with 1 teaspoon herbs added

    • ½ cup finely grated Parmesan cheese or any hard cheese

    • 4-6 pork chops, fat trimmed

    • 2 tablespoons olive oil

    Method

    • Preheat oven to 204°C / 400°F.
    • Line a baking tray with tin foil and place a cooling rack inside the baking tray.
    • In a shallow bowl, beat the eggs and water with a fork or whisk, add the mustard and whisk again.  In another shallow bowl, mix the bread crumbs and cheese until well blended.
    • Dip each pork chop in the egg mixture and then coat with bread crumb mixture. The double dipping of the pork into the egg mixture, and then the cheesy crumbs mixture will ensure that the coating will stick to the meat.
    • In a heavy-based frying pan, heat oil over medium-high heat. Add the pork chops, braise for 1 to 2 minutes, turning once until golden brown.
    • Place the pork chops on the rack inside the baking tray and bake for at least 20 minutes or until the pork chops are no longer pink in the middle.

    Notes

    • Serve with vegetables or a salad.
