Green Beans with Toasted Almonds and Garlic, a side dish not worth skipping

Green beans are a delicious vegetable with a crunchy texture and full of nutrients. If you are wondering how to give these veggies a flavour upgrade, this recipe is inspired by a French classic dish called Beans Amandine.

This Amandine is traditionally made with toasted almonds cooked in butter and lemon juice. 

I have added garlic and chillies to give this dish an extra punch of flavour.

    A side dish of green beans that packs a zesty punch. Don’t miss out on these when they are served because they are yum!

    Ingredients

    • 800 grams green beans

    • 2 tablespoons butter

    • 1 tablespoon olive oil

    • 1/2 cup sliced almonds

    • 3 garlic cloves, peeled and thinly sliced

    • 1 chilli, sliced (optional)

    • 2 tablespoons lemon juice

    Method

    • Trim the ends of the green beans.
    • Cook green beans in a large pot of boiling salted water until for 5 minutes. Drain and rinse under cold water.
    • Melt butter and olive oil in a large frying pan. Add almonds and cook, stirring occasionally. Cook until golden brown, about 3 minutes.
    • Remove the almonds from the pan. Add the sliced garlic and chilli (if using) and cook for a few minutes. Add green beans and lemon juice and stir to coat. Cook just until warmed through.
    • Transfer green beans to a plate. Sprinkle the almonds over and serve.
