Bake your own Gingerbread Biscuits to enjoy with tea or coffee

Gingerbread biscuits, you either love them or you don’t, but these are a favourite in my household. You can bake them for 10 minutes or 20 minutes, this depends if you like them soft or crispy.

Either way these gingerbread biscuits are a delight and so simple to make. You’ll probably be surprised that you haven’t ever made them before or maybe you have just forgotten about them.

Why not try making them today with my easy recipe and if you have a cookie cutter shaped like a little man, you can make them super fun for the kids to enjoy adding a little whimsy to your day!

    Store bought ginger biscuits are simply not as good as those freshly home baked goodies, so why not make them from scratch today?

    Ingredients

    • 250 grams margarine or butter

    • 6 cups flour

    • 2 cups of brown sugar

    • 3 tablespoons ground ginger

    • 2 jumbo eggs

    • 1 cup golden syrup

    • 3 teaspoons bicarb mixed with 2 tablespoons milk

    • pinch of salt

    Method

    • Cream the margarine and sugar well for about ten minutes.
    • Add the eggs on at a time, mix after each egg.
    • The ginger and syrup, with the milk mixture, can now be added (that is the bicarb mixed in the milk) make sure that this is mixed well.
    • Sift flour and salt together and add to the mixture.
    • Mix to a soft dough.
    • Make little balls, roll in sugar place in the prepared baking tray. Take the bottom of a glass dip in the sugar and flatten the balls and bake in the oven at 180°C for 10 minutes if you like them softer or 20 minutes if you like them crispy. Adjust the oven cooler if needed.
