Tuck into a classic Sunday lunch dish of Rolled Beef Roast

Intimidated by a beef roast? This easy to follow recipe will make child’s play of any roast challenge you ever had.

This recipe for rolled beef roast uses a fragrant mix of herbs and seasonings to make a spice rub. Add this to your joint of meat before you cook it for a unique flavour.

As the roast cooks, it will create juices that you can use to make a rich gravy. Leave this until right at the end of the cooking time.

As for that aroma of the rolled beef roast while it is in the oven, my oh my. You can probably smell it when you walk through the front door!

If you have any leftover slices of meat from your rolled beef roast, it makes a tasty filling for lunchbox sandwiches, or a Monday night pie.

    You’d expect something this delicious would be hard to make, but it’s really not. Did I mention it only takes just over an hour to make?

    Ingredients

    • 3 kg rolled beef roast

    • 1 tablespoon salt

    • 1 tablespoon fresh thyme

    • 1 tablespoon crushed garlic

    • 1 teaspoon brown sugar

    • 2 tablespoons barbecue spice

    • fresh thyme sprigs

    • fresh rosemary twigs

    • fresh black pepper (to taste)

    • 30 ml Worcestershire sauce

    • 2 tablespoons olive oil

    • 100 ml warm water

    Method

    • Make a rub of all the ingredients, except the fresh herbs and water. Rub the roast vigorously all over. Push the mixture into the openings of the rolled beef.
    • Preheat the oven to 180°C. Place the beef in a roasting pan with a lid, and pour in the water and fresh herbs.
    • Place your roast in the oven, covered, for 30 minutes.
    • Remove the lid for the next 30 minutes. Cook the roast for longer depending on how you like your meat: rare, medium or well-done.
    • The sauce in the bottom of your roast pan makes a delicious gravy. Add gravy powder to thicken.
    • Place potatoes around your roast for the last 30 minutes.
