Get baking with this zesty lime loaf that even an amateur baker can make. It’s fresh and packed with an overdose of vitamin C. Not to mention that it is super scrumptious at the same time.

If you’re feeling over these winter blues and ready to get those taste buds into full swing, this loaf will remind you that Spring is around the corner.

Like so many breads that are filled with sugar, this is really a great alternative as all the sweetness comes directly from the fruit.

Sugar-free Lime Loaf with Thyme and passionfruit

    Fresh and zesty filled with vitamin C. This lime loaf is easy to make and easily enjoyed.

    Ingredients

    • 170 g butter at room temperature

    • 2 eggs

    • 100 ml Greek yoghurt

    • 30 ml of lime juice

    • 2 limes ~ zest

    • 30 ml chopped thyme

    • 100 ml passionfruit pulp

    • 210 g self-raising flour

    • pinch of salt

    • LIME SYRUP
    • 2 sachets of sweetener

    • 100 ml freshly squeezed lime juice

    • 50 ml of lemon juice

    • 5 ml lime zest

    • 20 ml sugar for sprinkling on top when finished only

    • Thyme for garnish

    Method

    • Preheat the oven to 160°C and line a loaf tin with baking paper.
    • Whisk the butter and sweetener with a hand whisk until light and fluffy. Add the eggs one at a time and beat well after each addition.
    • Add the lime zest, granadilla pulp and Thyme together with the flour. Fold with a wooden spoon and don’t over mix.
    • Add the Greek yoghurt and mix gently – until just combined, again, do not over mix the batter, just fold.
    • Spoon the cake batter into the loaf pan, even it out and bake for about 40 to 50 minutes or until done.
    • While the loaf is in the oven, prepare the lime syrup. Mix all the ingredients together.

    • IMPORTANT ~ Let it cool for 5 minutes before you add the syrup.
