Bacon wrapped pork fillet served on a bed of mustard mash

An affordable and impressive dish. That is how I would describe this pork fillet wrapped in bacon and served on a beautifully balanced bed of mustard seed mash. It’s not only super simple to make, but it is also very tasty.

Travelling around the globe I am always sure to check the prices of various food items and as a meat lover I check the meat first. My findings are that pork is considerably more affordable around the globe making this a suitable dish where ever you may find yourself.

A filling dish suitable for week nights as this meal does not require a huge amount of preparation time or a lot of ingredients.

Ingredients

• For the Pork

• 2 2 x Pork Fillets

• 2 2 x packs of Bacon

• 4 tbs Garlic

• Salt (to taste)

• Pepper (to taste)

• For the Mustard Mash

• 4 large potatoes

• 1 cup milk

• 4 tbs whole grain mustard

Method

• Pre-heat the oven to 180 degrees celsius
• Rub the pork with garlic, salt and pepper
• Wrap the bacon around the pork fillets and place into an oven dish
• Place the dish into the oven and bake for 35 minutes
• For the Mustard Mash
• Boil a pot of water and place potatoes in the pot to cook until soft
• Peel the potatoes and mash them in a bowl
• Add the mustard and milk and mash until smooth and creamy
