Easy breakfast: Salami and egg muffins
These are not your traditional style muffins, more of a deconstructed quiche style breakfast. What makes this recipe great is that it is banting and paleo friendly.
The eggs are baked in a “basket” created by the salami. You can subsitute the salami with bacon or any sliced meat of your choice. You can get creative with the toppings and add mushrooms or spinach or feta.
Not only are these muffins delicious, they look fabulous if you want to impress the family!
